Balkan Cucumber Salad
Makes 4 servings
Every year I wait anxiously for the cucumbers to be ready so I can make this refreshing and easy to make salad. It's the perfect food for the beginning of the hot weather!
1/4 cup very thinly sliced red onions
2 medium cucumbers (6-7 inches long)
1/2 teaspoon salt
Freshly ground black pepper
3/4 cup yogurt
1 clove garlic minced
1 teaspoon honey (optional)
1 tablespoon freshly minced mint leaves (or 1 tsp dried)
1/8 cup (packed) finely minced parsley
1 scallion finely minced (greens included)
1 tablespoon freshly minced dill (or 1 tsp dried)
1/2 cup chopped walnuts lightly toasted (optional)
Peel (optional) the cucumbers, seed them (optional), and cut them into thin rounds. Place them in a medium sized bowl. Add the remaing ingredients except walnuts and mix well. Cover and refrigerate until serving time. Sprinkle the walnuts on top just before serving. Prep time: 10-15 minutes
